11 Jan - Repeal Day Celebration at The James Beard House
Last month, we celebrated the anniversary of Repeal Day at the James Beard House in New York City! All of the Freehand teams joined forces to serve up five-courses of deliciousness, including drinks & specialty dishes.
We kicked off the evening with Brined Scallops, which consisted of an Aguaschile Pureé, red onion and cucumber. Complementing this dish was a Griot and Pikliz Haitian pork shoulder with spicy slaw and plantain. The Bearded Lady was the perfect paired libation — an apple and pear-infused Martell VSOP and St Germain, topped with Perrier Jouët Brut.
Dinner began with a Tahini Miso Kale salad, highlighted by the Shaker Cup of Rosé with Lillet Rosé, Las 30 Del Cuadrado Palomino, honeydew melon, pink peppercorn and fresh herbs from the garden. This was followed by Coconut Red Curry with Florida Middle Neck clams, daily catch and Gulf Hopper shrimp. After, we enjoyed a flavor-packed tamarind and mustard glazed beef cheek with coconut, yucca croquettes and charred hearty greens. Of course, we toasted with a Boulevardier (mixed berry infused lot 40 Rye and Aberlour 12yr whiskies, stirred with Campari & Italian Vermouth) created by Shaker Founders Gabe Orta and Elad Zvi.
Our night ended sweetly, with a delicious Tres Leches consisting of guava sorbet, ricotta foam and guava jam created by our Beverage Director, Gui Jaroschy. The Paired Libation? A Nicaraguan Colada Cafecito — Café Integral’s own espresso-infused Jameson Irish Whisky, cardamom and amaro.
